Baked rhubarb could help fight cancer, according to research. Researchers at Sheffield Hallam University found that baking British garden rhubarb for 20 minutes dramatically increases its levels of anti-cancerous chemicals. It is the first time that the benefits of British rhubarb, specifically a variety grown in South Yorkshire, have been studied. Previous research has focused on Oriental medicinal rhubarb. The findings were published in the Food Chemistry journal.
