Schemes of Service: Research Division: Food, Chemical and Biotechnology Employment Type: Fixed Term As a University of Applied Learning, the Singapore Institute of Technology (SIT) works closely with industry partners to deliver translational, impact-driven research. This role supports applied food processing research projects with strong industry relevance, focusing on product development, process optimization and food characterization. Key Responsibilities Lead bench formulation of mushroom‑based and plant‑based food products, especially focusing on muscle‑like architectures to achieve required texture, flavour, and nutrition performance during cooking, reheating, and storage. Apply advanced texturisation techniques, including cold extrusion, lamination, and natural tenderisation strategies (e.g. enzyme treatment, solid-state fermentation), to create fibrous, meat‑like structures that replicate bite, chewiness, and elasticity. Translate scalable solutions from upstream processing (e.g. protein gels, fermented ingredients) into robust food formulations by collaboration with culinary experts, and lead pilot‑scale trials at facilities such as SIT FoodPlant to assess manufacturability, reproducibility, and scalability for clinical and consumer studies. Conduct textural, rheological, and sensory characterisation to evaluate product performance and guide formulation refinement. Consolidate formulation, processing, and performance data to support techno‑economic analysis (TEA), life‑cycle assessment (LCA), and cost–benefit analysis (CBA). Prepare scientific manuscripts, technical reports, progress updates, and final deliverables for funding agencies and stakeholders. Engage and communicate effectively with internal and external stakeholders to support progress meetings, technology transfer activities, conferences, and approved communication channels. Supervise and mentor junior researchers, engineers, students, and visiting scholars involved in the projects. The candidate is to communicate with all relevant internal and external stakeholders as required to meet the project deliverables. Any other adhoc duties assigned by supervisor. Job Requirements PhD in Food Science, Food Technology, or a closely related discipline. Strong Master’s degree holders with relevant experience may be considered. Strong background in food formulation, protein‑based systems, and texture design. Hands‑on experience with texturisation technologies, such as extrusion, lamination, gelation, or emulsion‑based structuring. Knowledge of protein gels, microgels, fat mimetics, and structure–function relationships in food matrices. Familiarity with sensory evaluation, texture analysis, and rheological measurements, food system characterization. Experience translating laboratory‑scale formulations into pilot‑scale or industry‑relevant processes. Understanding of nutrition‑driven product design, particularly for vulnerable or special‑needs populations. Ability to integrate culinary considerations into scientific formulation and product development. Strong problem‑solving skills with attention to both scientific rigor and practical feasibility. Excellent communication skills for interdisciplinary collaboration with engineers, nutritionists, clinicians, and industry partners. Ability to work independently while contributing effectively to a multidisciplinary applied research team. Detail-oriented, self-motivated, and able to work independently as well as collaboratively in multidisciplinary teams. As a University of Applied Learning, SIT collaborates closely with industry partners in our research pursuits. Our research staff can gain practical research skills that are directly relevant to industry needs while working on projects at SIT. The main responsibility of this position is to deliver on an industry innovation research project. The Research Fellow/Engineer will be a key member of the research team focused on developing a framework for soil conditioning in Singapore soils through a series of experimental investigations. Additionally, they will work on delivering a novel Screw Conveyor Extraction Test (SCET) equipment, crucial for accurately assessing the effectiveness of soil conditioning in tunneling processes. The proposed framework and equipment will be validated at an active tunneling site. Key Responsibilities Participate in and manage the research project with the Principal Investigator (PI), Co-PI and the research team members to ensure all project deliverables are met. Undertake these responsibilities in the project: Execute all experiments (e.g. foam stability test, slump test etc.) reliably. Liaise with the industry partner and agency to plan and execute the field trials. Develop the framework for effective soil conditioning in local soils. Design the SCET equipment and liaise with vendors in its manufacture and assembly. Validate the framework and SCET using findings from field tests. Mentor and provide technical guidance to student assistants involved in the research project. Carry out Risk Assessments, and ensure compliance with Work, Safety and Health Regulations. Coordinate procurement and liaise with vendors/suppliers. Work independently, as well as within a team, to ensure proper operation and maintenance of the equipment. To liaise with any internal or external stakeholders to ensure project deliverables are met Any other ad-hoc duties assigned by Supervisor. This role supports an awarded applied research project on cricket protein (CP)-based functional beverages, focusing on protein chemistry, emulsion engineering, scalable food processing, and consumer acceptance. The appointee will contribute to SIT's sustainable food innovation agenda, working within a multidisciplinary team with access to established research platforms and pilot-scale facilities. Key Responsibilities Characterise insect protein and their hydrolysates for compositional and techno-functional properties under different processing conditions (enzymatic hydrolysis, heating, drying, homogenization) Investigate the impact of food processing on protein-polysaccharide interactions under different food processing conditions. Profile phenolic compound and evaluate the bio-functional properties such as antioxidant activity Identify optimal processing conditions that minimise bioactive losses for functional beverage applications. Design and formulate insect protein-based oil-in-water emulsions for the encapsulation and delivery of bioactives. Develop and optimise functional beverage prototypes that are suitable for industry-scale beverage manufacturing and evaluate their emulsion stability and estimated shelf-life. Conduct in vitro bioaccessibility and bioavailability studies for encapsulated nutrients using existing SIT analytical facilities. Support the design and execution of consumer surveys assessing Singapore consumers' acceptance of foods and beverages. Perform principal component analysis (PCA) and multivariate statistics to identify relationships between demographic factors and product acceptance and integrate findings as feedback for beverage formulation. Prepare scientific manuscripts, technical reports, and progress updates for funding agencies, journals, and stakeholders. Present findings at project meetings, industry engagements, and academic conferences. Supervise and mentor junior researchers, research assistants, and students attached to the project. Job Requirements PhD in Food Science, Food Technology, Food Chemistry, Chemistry, Nutrition, or a closely related discipline. Solid grounding in protein chemistry, protein hydrolysis, and structure–function relationships in food systems. Hands-on experience in emulsion formulation and stability characterisation, including droplet size analysis and shelf-life assessment. Familiarity with food processing technologies such as HTST, UHT pasteurisation, drying, heating, and high-pressure or multi-stage homogenisation in beverage or liquid food systems. Working knowledge of biochemical and antioxidant assay methods, HPLC, MS, and their application in food ingredient analysis. Experience with in vitro digestion models and bioaccessibility or bioavailability testing is a strong advantage.
