Nottingham Trent University has taken its cool "entrepreneurial" image a step further: by manufacturing its own ice cream. Made with cream from its herd of Jersey cows, the university's department of land-based studies is selling the product in its Brackenhurst farm shop. A spokesman said: "All the profits will be ploughed back into the department."
