Researchers at the University of Aberdeen are on the lookout for tomato-loving volunteers to take part in a study to confirm whether the fruit can help to prevent heart disease. Mediterranean countries, where tomatoes are a staple food, have significantly lower rates of heart disease than Western Europe. It is thought that tomatoes may contribute to this by helping to protect against strokes and heart disease, but this hypothesis has yet to be confirmed by dietary trials. Scientists want to learn if it is the red pigment lycopene or the whole tomato that is responsible for the benefits.
