Aberystwyth University - Menu shows great taste

Higher education institutions are not generally noted for the their fine cuisine, but the roast saddle of lamb at Aberystwyth University features in the 2008-09 True Taste Wales Food & Drink Awards. Kevan Downing, the university's head of hospitality, and farms manager Huw McConochie, have been working to introduce a healthy menu in the university's restaurants by using meat and vegetables grown on the university's farms. This has led to a significant drop in food miles, with university-produced meat clocking up just 36 miles from farm gate to plate.
