The Autonomous University of Puebla has a long and deeply political history, having been controlled by many different groups over its four centuries of history. It was founded in 1578 when a group of Jesuits settled in the city and built the College of the Holy Spirit.

In the late eighteenth century, political tensions in Spain resulted in the Jesuits being expelled twice. After Mexico gained independence from Spain, the College was renamed as the Imperial College of San Ignacio, St. Jerome and Holy Spirit, then as the State College.

The College established itself as a liberal, humanist hub, and in the early twentieth century, students supported resistance to the dictatorship of President Porfirio Diaz. The College became a University in 1937, and gained full autonomy in 1956, becoming the Meritorious Autonomous University of Puebla (BUAP).

The University continues to espouse liberal values, promoting inclusivity, equal opportunities, human rights and transparency in its mission statement. One of its outdoors spaces is known as ‘Democracy Plaza’.

BUAP has a number of campuses throughout the state of Puebla. Its four major zones in the city of Puebla include the University City – which houses the faculties of physical sciences – and the Health Area, where the Schools of Nursing and Medicine are based. BUAP also has nine regional sections, three near-autonomous ‘foreign academic units’, and six high schools.

A University Cultural Complex hosts regular dance, musical and theatrical events for BUAP students, who also have a radio station, Radio BUAP, and university sports teams, the Lobos BUAP (wolves).

Celebrated intellectuals associated with the university include the polymath Carlos de Siguenza y Góngora, and novelist Ignacio Manuel Altamirano.

Description The Perception and Active Cognition (PAC) Lab at New York University Abu Dhabi (NYUAD) is seeking an Emirati Junior Research Scientist for a 30-month position supporting a collaborative research project between NYUAD and the National Academy of Childhood Development (NACD), a subsidiary of Abu Dhabi Early Childhood Authority. Applicants with a background in psychology, neuroscience, linguistics and developmental psychology are encouraged to apply. Terms of employment include competitive salary and benefits. This role involves on-site work across NYUAD and NACD facilities and focuses on interdisciplinary research at the intersection of psychology, neuroscience and linguistics. This role supports applied food processing research projects with strong industry relevance, focusing on product development, process optimization and food characterization. Key Responsibilities Lead bench formulation of mushroom‑based and plant‑based food products, especially focusing on muscle‑like architectures to achieve required texture, flavour, and nutrition performance during cooking, reheating, and storage. Apply advanced texturisation techniques, including cold extrusion, lamination, and natural tenderisation strategies (e.g. enzyme treatment, solid-state fermentation), to create fibrous, meat‑like structures that replicate bite, chewiness, and elasticity. Translate scalable solutions from upstream processing (e.g. protein gels, fermented ingredients) into robust food formulations by collaboration with culinary experts, and lead pilot‑scale trials at facilities such as SIT FoodPlant to assess manufacturability, reproducibility, and scalability for clinical and consumer studies. Conduct textural, rheological, and sensory characterisation to evaluate product performance and guide formulation refinement. Consolidate formulation, processing, and performance data to support techno‑economic analysis (TEA), life‑cycle assessment (LCA), and cost–benefit analysis (CBA). Prepare scientific manuscripts, technical reports, progress updates, and final deliverables for funding agencies and stakeholders. Engage and communicate effectively with internal and external stakeholders to support progress meetings, technology transfer activities, conferences, and approved communication channels. Supervise and mentor junior researchers, engineers, students, and visiting scholars involved in the projects. Lead applied research on mushroom-, mycelium-, and plant‑based (PB) protein ingredients, with emphasis on improving nutrition, flavour, digestibility, and techno‑functional performance. Design and execute physicochemical and biological processing strategies for protein enhancement, including thermal (UHT, ohmic heating), non‑thermal (ultrasound, high‑pressure homogenisation, microwave, pulsed electric fields), and solvent‑shifting approaches (pH and salt shifting). Evaluate and integrate green processing technologies, including deep eutectic solvents, for protein extraction, off‑taste reduction, and sustainability‑driven process optimisation. Lead the process design for scale-up fractionation and separation from bench-top, to pilot plant scale production involving centrifugation, clarification, recovery and separation of supernatant, and drying process. Support AI‑enabled data analysis, including collaboration on Artificial Neural Networks and Gaussian Process modelling, to accelerate processing optimisation. Consolidate experimental, techno‑economic, and sustainability data into robust technical evidence packages for project reporting, stakeholder engagement, and regulatory or translational decision‑making. Description The Mubadala Arabian Center for Climate and Environmental Sciences (Mubadala ACCESS) at New York University Abu Dhabi (NYUAD) invites applications for a Junior Research Scientist to support a multidisciplinary research program investigating the environmental and ecological drivers of productive fishing grounds in the United Arab Emirates. Working alongside researchers from NYUAD and Emirates Nature–WWF, the successful candidate will contribute to marine habitat mapping, spatial analysis, and environmental data integration to support fisheries management and marine conservation. The Junior Research Scientist will support the acquisition, processing, and analysis of marine spatial and environmental datasets collected throughout the project. Working within a multidisciplinary team, the successful candidate will assist in developing habitat maps, managing spatial databases, integrating environmental monitoring data, and producing analytical outputs that inform conservation planning and fisheries management. The role combines office-based spatial analysis with opportunities to participate in field surveys, environmental monitoring, and marine habitat assessments across the UAE. The successful candidate will assist with processing GIS, bathymetric, habitat, and environmental datasets, maintaining project databases, and supporting the development of habitat maps and spatial products. Responsibilities include assisting with side-scan sonar and underwater imagery processing, data quality assurance, statistical analyses, and preparation of maps, figures, reports, and scientific publications. The Junior Research Scientist will also participate in field campaigns to collect environmental and spatial reference data and contribute to project reporting and stakeholder deliverables. Applicants must hold a Bachelor's or Master's degree in Marine Science, Geography, GIS, Oceanography, Environmental Science, Spatial Ecology, or a closely related discipline. Establish a nanomechanical and macro textural foundation for small sample cultivated meat using advanced tools such as AFM, micro-indentation, and micro texture analysers (e.g., TA.XT plus), Confocal Laser Microscopy Imaging etc for the purpose of quantification of hardness, chewiness, springiness, fracture stress, and fracture strain for small sizes of food samples Compare the feasibility, resolution, and accuracy of AFM, indenters, and micro-TA probe type systems specifically for characterising cultivated meat, contributing method development knowledge to the field. Deploy dynamic oral processing simulation platforms, including tribology, Kramer shear cell testing, and mastication simulators to investigate breakdown characteristics, brittleness vs. plasticity, and frictional/lubrication properties. Generate mechanistic insights linking textural dynamics to sensory perception. Integrate multi-modal datasets from different mastication simulators into a 3D Principal Component Analysis (PCA) space, enabling quantitative comparison between cultivated meat and conventional animal meat, and identify key textural descriptors defining equivalence. Develop novel experimental or analytical methodologies to address current gaps in small sample meat texture characterisation and oral processing simulation. Consolidate experimental data into robust evidence packages for academic publications, grant reporting, and translational research decisions. Coordinate project timelines, milestones, resource allocation, procurement, and compliance with institutional and ethical requirements. Prepare and submit high quality scientific manuscripts to peer reviewed journals, as well as technical reports, progress updates, and final deliverables for funding agencies. Engage actively with internal and external academic collaborators, organise progress meetings, and contribute to technology transfer where relevant to open science or public benefit. Present research outcomes at international conferences, academic seminars, and stakeholder meetings, and contribute to outreach through approved communication channels. Strong background in mechanical properties of soft matter, food texture analysis, or biopolymer/tissue mechanics, with demonstrable experience in cultivated meat, plant-based meat analogues, or animal tissue characterisation. Hands on experience with mechanical characterisation tools (AFM, indentation, DMA, texture analysers, rheometer and tribology, CLSM, low field NMR) and a solid understanding of fracture mechanics (stress/strain, hardness, chewiness, springiness). Proficiency in oral processing simulation techniques such as tribology, Kramer shear testing, and/or mastication simulators, with the ability to interpret breakdown and lubrication behaviour in a mechanistic context. Competence in multivariate statistical analysis, particularly PCA, 3D PCA, or other dimensionality reduction methods for integrating complex, multimodal datasets. Experience working with limited sample volumes, and ability to design robust experimental protocols for small batch cultivated meat production. Evidence of scientific productivity, including first-author publications in peer-reviewed journals, conference presentations, or equivalent outputs. Ability to translate complex experimental outcomes into testable hypotheses and conceptual frameworks, rather than product-focused deliverables. Strong project ownership and autonomy, with capacity to balance scientific depth, reproducibility, and methodological rigour.
