Food and Beverage Controller 

Department: Catering & Bar Services 

Reports To: Deputy Catering & Bar Services Manager 

Grade: Band E 

Salary: £22,876 per annum 

Hours: 36 hours per week (5 days over 7), 52 weeks per year 

Term: Permanent 

Annual Leave: 20 days per annum 

We are seeking an experienced and motivated Food & Beverage Controller to oversee the ordering, purchasing and issuing of goods. The key purpose of this role is to help minimise food and beverage costs by monitoring the cost and quality of goods being received and ensuring best practice in stock management to achieve financial targets. 

You will ensure that the business has sufficient amount of food and beverages to meet customer needs whilst ensuring the business remains profitable. 

Key tasks will be: 

  • Create monthly purchase orders for each supplier and monitor costs. 
  • Overseeing all food and beverage orders and ensure delivery notes/ invoices are correctly entered into the stock and finance system for payment. 
  • Maintain and monitor control procedures for all stock items. 
  • To carry our weekly and monthly stock takes, analyse reports and take corrective action where necessary. Present reports to management. 
  • To be a key contact between suppliers and production and retail heads to gain efficiency and increase revenue through smart product choices. 

​To achieve success in this role you will be a confident team player with the ability to forward plan. You will also have strong analytical, numerical and IT skills. You will be a good communicator and have a pro-active approach taking responsibility and initiative to prevent and resolve problems. You will have an eye for detail and be a keen negotiator with suppliers, demonstrating best purchasing practice and stock control. 

You will work closely with the wider management team, the Head Chef and the Front of House Co-ordinator and build strong relationships with external suppliers and also colleagues across the University; seeking opportunities to improve quality of management information. 

The Catering & Bar Services Department is an in-house operation at St. Mary’s and is part of the TUCO purchasing framework. It caters to the food and beverage requirements for all catering and bar outlets, delivered hospitality, all functions including weddings, conferences and meetings, at locations on and off campus.
