Retail Coffee Service Manager
Description of Work Unit
Lory Dining Services exists to sell a variety of food and beverages, in a safe and sanitary environment and for the best possible value, to a diverse customer base at Colorado State University. Lory Dining Services supports the overall mission of the Lory Student Center to provide appropriate physical facilities and programs that deliver high-quality social, educational, recreational, and cultural experiences to a diverse student, University, and community population.
This position exists to provide Lory Dining Services with the ability and leadership to be dynamic in development of emerging coffee and food service trends that meet the needs of the campus community. Duties include compliance with Environmental Health Services and state of Colorado rules and regulations, development and implementation of new menu items and updating standard operating procedures. Position has responsibilities over a combined revenue budget of $2 million. Position also has oversight of student staff, inventory management, sustainability efforts and develops training and development regimen in new and existing coffee shops and ensures excellent product quality and customer service through effective staff training.
Required Job Qualifications
- Possesses a Bachelors degree from an accredited college, university or academic institution with preference for a major or minor emphasizing business, hospitality, or a related field.
- Possesses one year of progressive supervision and/or leadership experience in food service.
Preferred Job Qualifications
- Demonstrates work experience with a food safety program (HACCP, ServSafe or other comparable food safety program).
- Experience working with inventory management software (ie CBORD, Cheftec, Yellow Dog, Food Pro, etc.)
- Experience working with and training others, within a customer service industry.
- Experience with menu and recipe development.
- Possesses two full years of full-time oversight of a staff of ten people or more.
- Two years experience working as a barista in a coffee shop.
- Experience with sustainability initiatives such as composting programs, energy and waste reduction efforts, and behavior change campaigns.

- Meet with vendor representatives to explore new and replacement products, negotiate pricing and manage inventory. Review current recipes, update to meet changing tastes as well as to improve overall product. Source highest quality ingredients for best possible value.

- Review standard operating procedures regularly and implement new flow and production models to increase productivity and efficiency with adherence to all Environmental Health Services guidelines and policies. Create and execute structured training programs for baristas and student managers for customer service and quality control. Meet with Assistant Director for Retail Operations and student managers regularly.

- Develop recipes (electronically) and help maintain Yellow Dog and its applicable uses for inventory management, cost analysis, product movement, purchasing, and other fiscal control measures.

- Analyze all aspects of coffee shops and implement changes accordingly from sourcing of ingredients to the final product. Sourcing of ingredients includes procurement of sustainable products (local, organic, compostable, and third party certified products). This also includes decisions and implementation of cleanliness and sanitization services that help to maintain the operation.

- Develop and improve menus in both new and existing coffee shops. Merchandise and market products sold in coffee shops. Make recommendations on equipment purchases and remodels of existing coffee shop locations.
