This Lead Cook (DS IV) position will act as a work leader over employees and a fully operational cook preparing/producing food from an established pre-printed menu and standardized recipes. Responsible for quality, quantity and appearance of foods prepared, as well as training, coaching and mentoring. This position will mainly work at the Durrell Dining Center with a work shift of Sunday through Thursday from 5:30am – 2:30pm.
Note: Work schedules and location are subject to change due to business operation needs throughout the year.
Three years of food production experience in a commercial kitchen environment.
The ideal candidate will possess the following competencies (e.g. knowledge, skills, abilities, and other personal characteristics) which have been outlined as essential to performing successfully in this position:
- Complete coursework in Culinary Arts (i.e. Associates or Certification) Please be sure to provide your Culinary Arts coursework in the Education and/or License/Certification section of the application.
- Work experience in a high-volume (500+ meals) food production operation and food safety certification such as ServSafe or HACCP.
- Strong leadership skills demonstrated through a positive attitude, pro-active approach to work, ability to mentor and train others, and delegate tasks by identifying others strengths.
- Demonstrated ability to handle multiple activities/tasks with competing priorities.
- Demonstrated interpersonal and verbal communication skills necessary for building and maintaining successful work relationships.
- Exemplary customer service skills and a desire to provide memorable customer service interactions with clients and customers.
Essential Job Duties
Job Duty Category Food Production Duty/Responsibility
- Serve as the work leader over personnel.
- Provide input on the operation and produces meals from preprinted menus using standardized recipes and methods to maintain high quality, nutritional standards, and safety & sanitation regulations.
- Food items are produced by the ability to bake, roast, broil, steam, fry, grill, chop, measure, and mix ingredients, etc. by hand or using power operated equipment.
- Monitor and restock service areas by assuring food product quality and availability.
- Record/verify temperature control checks (HACCP).
- Garnish foods in an attractive manner.
- Pull/prepare and produce food items for further use.
- Train hourly and other Classified employees to do the same.

- Determine if areas meet established level of cleanliness and when to do appropriate scheduled cleaning.
- Also check quality of work of the hourly employees. Report safety hazards if seen.

- Monitor, supervise and assist in handling food and supply items properly by storing, refrigerating, freezing or disposing following safety, sanitation, and operation guidelines.
- Record and access customer counts, food preparation, production, inventory and all other information pertinent to Computrition Menu Management System.
- Train hourly and other Classified employees to do the same.

- Conduct inventory and orders by gathering data, past and present, to meet the need for future foods and supplies.
- Using the Computrition Purchase Requirements Report determine items needed & quantities to be ordered.

- Assure established rules and regulations are enforced and followed by colleagues and customers.
- Establish and nurture a positive relationship with customers.

- Close kitchen and shut down equipment by exercising safety, sanitation, and security procedures.

- Attend assigned meetings and training sessions passing appropriate assessments as applicable (ie: Dining, Departmental, Unit, ServSafe Manager Certification, Allergy Training, New Employee Training, etc.).
