To analyse samples to understand the astringency of proteins for their potential use in food products. In addition to collecting saliva from human subjects, the interactions of salivary proteins with astringent proteins, using electrophoretic, rheological and other methods will be examined. The key responsibilities and objectives include saliva collection, sample analysis, compiling and reporting results.
